I proudly present….. My first raw wedding cake :D It is called the Lotus Delight :D
For a delightful marriage, enfolding like a lotus opening it’s petals!
And of cause everything came together very spontaneously as my cooking always seems to be :D!
It wa sjust a small celebration of very close friends, but I didn’t realize that I would be the person to make THE wedding cake until the day before!
Well after my last raw food cheesecake it was obvious it needed to be one! This one is without coconut though!
And the decoration came very in the moment, but I really like the lotus petal thingy, don’t you?
Again the recipe is real simple and very similar to my other cheesecake, this time I improved though in the consistence of the cream and I added lemon zest which tastes awesome, I think!
So the crust is:
1cup hazelnuts
1 ½ cup of dates
1 tbsp cold-pressed sunfloweroil (if needed)
I always mix the hazelnuts until my blender makes then turn into powder^^, blend the dates until they are a sticky dough and knead them together with my hands. I add oil if it doesn’t stick enough (depend on your dates!) Press dough in the form until it covers the bottom and the walls evenly!
And the cream:
2cups cashews
½ cup water (the less the better!, start with ¼ and keep adding)
3-4tbsp coconut oil
2-3 tbsp honey
pinch of vanilla
½ tsp lemeon zest
Mix it all together in a high speed blender until it’s a delicious cream! Pour the cream into the prepared form.
Store the whole cake best overnight in the fridge, so it can settle, otherwise you can also eat it right away, but the cream will flow away :D!
For the decoration you can become creative! I did the lotus flower very easily by tying a rubber band to the top and lying two napkins in a 45° angle under the cake tin. So you have 8 corner-star and then I folded each corner or „petal“ gently under the rubber band. Tada! :D
