Dear friends,
this recipe got born in a creative kitchen afternoon! After making the vegan cheesecake for a friend’s birthday party, I was so inspired to make treats for my friends that I began to develop a travel treat for another friend who is flying to America soon.
I know that she loves raw food and sweet things and would certainly prefer some raw energy snack on the way than a crappy reheated muffin from the next bar… so this came out! :D
The ginger is a strong antimicrobial and antioxidant, stimulates the digestion and is said to help against travel sickness actually. The honey and also the oats are for calming down the nerves to be tranquillo -whatever train or flight you are afraid to miss, this can help you :D!
Sultanas are the sweet touch and very alkalining and hazelnuts are the protein and fat component that also add in a yummy flavor!
Lemon is just for the fresh taste and has awakening powers! Paramhansa Yogananda, a great yoga master from India, says that lemons are the food with the highest vibration!
So what can you want more for a safe travel of your dear friend?!
Now I let you play around, this is what I took:
80g hazelnuts
120g rolled oats
200g sultanas
1 pinch lemon zest
1 tsp lemon juice
3 drops of ginger essence or freshly finely grated ginger
1 tbsp honey
1-2 tbsp water (if necessary!)
First I grounded the hazelnuts and 80g of rolled oats in my high speed mixer, then blended the sultanas and added all ingredients together (also the remaining 40g of rolled oats) in a big bowl. I gave them a good knead through with lot’s of love and joy flowing into the dough, sometimes I even sing^^. This is maybe even the most important ingredient, I think, especially when making gifts for people you love! :D
Then I took big teaspoon of the sticky but smooth dough and formed them with my hand into little balls, rolled them in a few rolled oats on a little plate to give them a nice look from outside and reduce the sticky touch feeling, I fixed the oats by rolling them again in between my hands and done!
For transportation I filled them in a nice recycled honey jar and was rather happy how the little cuties are looking rather content in their new home :D!
Safe travels I can only say now! Let me know how you like them and where there travel with you by leaving a comment :D!
With joy,
Ruby
