I think it is not a secret anymore that I love cheesecakes, but my taste has wondered a little, first vegan cheesecakes, now it’s raw cheesecakes!
Well, yes there are not cheesy-cheesy anymore, but better! And your whole body will feel much better and happier after eating this instead of a sugar-whiteflour-poor milk products-one….
And it is faster! though I recommend letting it sit in the fridge one night before eating, then the cream is firm and cuts beautifully! But for the impatient it tastes also amazing freshly made! I can tell, because I already eat the dough :P
This one got eaten after a beautiful walk in the golden sun and rolling hills of Umbria with a dear friend! She did the decorations by the way! The lavender tastes actually real good, so it’s „in“ (the recipe)^^!
What can be better coming home and know THIS is in your fridge waiting, maybe with a cup of tea….?!?
Crust:
I blend dates and nuts separately and then knead everything together and press it into a little spring form.
Filling:
This goes all in my high-speed mixer, press play and wait until it becomes a thickly, creamy mousse! The thicker the better, maybe add more cashews but my mixer sometimes doesn’t mix well when it’s too thick!
Pour the filling into the spring form and store in the fridge until you are ready to ENJOY it with your friends!

- 1tbsp coconut oil

- 1 cup fresh coconut
- 2-3 tbsp honey
- ½ tsp lemon zest
- ½ water
