Hello everyone,
today is the day of the food :) I can’t tell how how much I just enjoyed making and eating this delicious indian feast :D Something about Indian food makes my whole body always gasp of relief and feel so nourished and soothed. The spices, the warmth and then the colors and all the flavors in one dish! (Very ayurvedic!^^)
Maybe also sitting in front of you this and speaking to noone refines your senses, I tell you the last thing I enjoyed so much was.. maybe the pizza in Naples :D!
Ok enough of the Schwärmerei (dt., enthusiastic praise)! Here is the recipe:
Aloo Gobi (2 Pers)
3 potatoes
½ cauliflower
1 onion
1 chunk of ginger (1cm long)
1 tsp of black mustard seed
½ tsp coriander seeds
½ tsp turmeric
1 tsp curry or masala spice
1 tip of chili (optional^^)
2tbsp sunflower oil or ghee
salt
Chop onion&ginger in tiny pieces, potato and cauliflower in bigger pieces (0,5-1cm).
Fry all the spices with the onion in the oil until they just start to brown, add veggies and salt and about 1cup of water and let it steam with a cover until the potatoes are soft, real Indian waits until it’s all mushy, however we don’t need to kill everything in there and can eat it when we feel its cooked :D! I add also chili and often more salt^^, but everyone has its own taste!
Pear Chutney
I love chutneys!! They make a Indial meal a feast. And I had this soft, too sweet pear all the time and then I had the enlightened idea: It’s chutney time for the pear! :D
1 big chunk of ginger (2cm)
½ coriander seeds
½ anis seeds
1 tip of chili
black pepper
1 big, soft pear
Again fry spices in oil and then add the fruit, cover with little! water and wait until the pears soften, stir from time to time to create a mushy, homogenous texture!
Rice is easy, just get good basmati rice and cook it with double amount of water until it has adsorbed all the water! I always let it sit for another 5min or so in the last moisture in the pot and miraculously the rice eats it all until you are ready to eat and it nice and sticky-fluffy. :P
AND THEN: Most important place all the dishes on your plate, decorate with almonds or fresh coriander leave cause the eye eats as well^^ as we say in German! Before diving in the food, take a breath look at your plate and enjoy deeply!
