This morning I made fresh raw almond milk, not knowing yet what I really wanted with it, but then this came in the advent calendar and I knew! Almond Chai! First time that i made it with 'almond latte‘^^ but I think you can guess how good it is!
So I tell you how it goes:
Almond milk is super easy to make, just remember to soak a proper handful of almonds at least overnight in 500ml water. Next morning you pour it all into your blender and go really fast for ca. 20s. Then you strain it, best through a cheese cloth -I did a tea filter^^- and you have wonderfully white creamy latte! The almond pulp can be used in smoothies, eaten like the with honey or anything you want! Just don’t throw it, but use it in some amazing way!
And the chai I made like this: I heated 300ml almond milk with the species and some extra ginger cubes :) (If you don’t have chai spices already mixed, for one 300ml cup you can just blend together - as I usually normally do, too- ½ tsp cinnamon + ¼ tsp cardamon + 1tsp fresh ginger in cubes + pinch of cloves + pinch of chili or black pepper)
Take care when heating the raw almond milk, just heat it but don’t boil it, otherwise the protein denatures. You get better flavor it you let it sit for a little while, but I also drank it straight away :)!
